The high proportion of first-fill European sherry casks gives a warm and dry spicy note, and the first-fill American sherry casks support notes of vanilla and crème brûlée. Finally, the refill casks shine through, exposing the DNA of Highland Park whiskey, namely its gentle heather peat and light fruitiness.

AROMA
There's also a hint of freshly baked sponge cake, hot from the oven, and you'll find cinnamon again, but toasted shards this time. Citrus and vanilla notes linger in the aromatic waves of peat smoke.

DESCRIPTION
This is a wonderfully rich and complex single malt. It opens with rich and spicy aromas of creme brulee, heather honey and crumbled cinnamon, followed by intense fruity notes - fresh pineapple with a hint of sun-kissed lemon peel.
To create 15 Year Old Viking Heart, Gordon Motion, Highland Park Master Whiskey Maker, selected predominantly sherry-seasoned European oak casks to deliver warm, spicy notes and sherry-seasoned American oak casks to provide a balance of sweet vanilla.
Gordon chose to bottle the whiskey at 44% ABV to allow the whisky's lively fruitiness and characteristic hot peat smoke to shine through, adding only a few casks of refill to soften and even out the flavours.
Why a ceramic carafe?
Rewind a century or two and Highland Park whiskey would have been stored in earthenware containers.
Inspired by examples found at Highland Park Distillery in the Orkney Islands, we asked Wade Ceramics if they could collaborate with us to create a modern version.
Founded in 1810, Wade is based in Stoke-on-Trent, England (known globally as the traditional home of pottery) and shares Highland Park's commitment to environmental responsibility, focusing on sustainable production and using local raw materials.
The lead-free porcelain decanter is 100% food safe, glazed inside and out and embossed with the lion and snake design also found on many of Highland Park's glass bottles. Take a closer look at the back of the bottle and you will find the heart motif that inspired this whiskey's name.
They have been producing Highland Park award-winning whiskeys at the Highland Park Distillery in Kirkwall, Orkney since 1798.
