From Ice Age Chalk to World-Class Gin
One of the most vital ingredients in any spirit is water, and Volsted is fortunate to have access to some of the purest, cleanest-tasting water Denmark has to offer. The water is drawn directly from their own borehole beneath Storbjerg, a chalk hill formed by glaciers during the last ice age. This high water quality helps enhance the tasting experience and gives the distillery's gin its distinct profile.
An Engineer's Dream
Behind the distillery stands Thorbjørn Ravn Kaagaard – founder and head distiller. With a background in process engineering and experience in traditional snaps production, he designed the distillery’s production facilities and custom distillation apparatus himself. It is here, overlooking the quiet river valley, that the recipes for Volsted’s gins take shape.
Thorbjørn’s approach blends technical precision with artisan craft, and that balance is apparent in every detail. Each batch is distilled in a 100-litre copper still, using both pot and vapour infusion to extract the finest aromas from carefully selected botanicals.
