Stauning: From an Old Abattoir to World-Class Whisky
The story of Stauning Whisky began in 2005 with nine friends and an old slaughterhouse building near Ringkøbing Fjord. They had zero distilling experience — but they shared a genuine love for whisky and the nerve to give it a shot.
Instead of copying Scottish methods, they chose to listen to their surroundings: local grain, local peat, floor malting turned by hand, and open washbacks. Everything done on their own terms — hands in the mash and nose in the malt.
Today, Stauning is still driven by those same values — albeit on a much larger scale and from a distillery that looks like a cross between modern sculpture and a traditional Danish barn. They still distill in small direct-fired pot stills over open flame, and the entire process — from grain to glass — is owned, run, and shaped by Stauning themselves.

“Grain-to-glass” means the distillery handles every single stage — from sourcing the grain to malting, fermentation, distillation, cask maturation, and bottling.
This is far from the norm in the whisky industry. Many distilleries buy commercial malt, outsource aging, or bottle off-site. Stauning chose to do it all themselves. Why? Because it produces a more honest, authentic whisky.
It allows them to control quality down to the finest detail while letting local terroir speak for itself. You can taste the North Sea air, the wind, and the Jutland soil. Stauning’s whisky simply tastes of its home.
