TIME : SPACE Sherry Cask

TIME : SPACE Sherry Cask is a 20-year-old single malt from The Macallan, bottled at 44.8% with natural colour. It is the third chapter in the TIME : SPACE series and the first Macallan influenced by casks seasoned with sherry from the distillery's own Valdespino bodega.

The TIME : SPACE series

The series belongs to Macallan's 200th anniversary. The first two releases were TIME : SPACE and TIME : SPACE Mastery. All three are bottled in the same round bottle, designed to show past, present and future as one continuum.

The Valdespino casks

Macallan today owns the sherry house Valdespino in Jerez de la Frontera. The whisky first matured in sherry-seasoned casks, predominantly European oak with a smaller share of American oak. It was then married in a selection of the first 200 casks seasoned at Valdespino's bodega. The casks were built by coopers in Jerez and filled in Scotland in 2024, the year Macallan turned 200.

The taste

Macallan's own tasting notes

Nose: Sherry-soaked raisins, figs and Medjool dates with frangipane, honeycomb toffee and caramelised nuts. Dark chocolate truffles, cinnamon, star anise and ginger.

Palate: Dried fruit such as sultanas, dates and apricots, spicy gingerbread, syrup toffee, blackberry jam and chocolate-coated cherries. Warmth from cloves and cinnamon, moving into cocoa nibs and polished oak.

Finish: Warm wood spices, a hint of espresso and soft oak.

Packaging

The round bottle sits in a box inspired by the Palomino grapes used for Valdespino's sherry, with a warm yellow interior.
